It was a little bland. I added some coriander and a few other spices. I also doubled the red pepper flakes. Great base for coconut curry and thanks for helping me make and understand how to make it!

Good as an overall guideline for coconut curry - I ended up adding extra spices (ex. paprika, turmeric, cinnamon) since I was worried it would come out too bland and ended up mixing in some broccoli as well. I recommend using this recipe as a base and just playing with the spices in your closet to suit your taste

Super simple and tasty. I advise you to mix all the spices into the coconut milk before adding it to the cauliflower.

Great! A little more curry and some onion and garlic powder. Plus some Harrisa instead of plain red pepper flakes. Placed on red quinoa and topped with curry grilled tofu. My toddler and tween loved. Hubby too.

Great! I assumed the curry powder in the recipe wouldn’t be enough, and may have overdone it a bit! Also cooked the cauliflower at 350 for 40 minutes & then added baby spinach & cooked quinoa to it! My husband and I really loved it!!

Not the best, I was hoping to enjoy leftovers, but it feels more like a task to get rid of it. I did add 1 tbsp of red curry paste and I'm glad I did. It wasnt very creamy, but it became more creamy as I baked it 25 minutes over the recommended time.
