- 1/2 tsp. baking soda (aluminum free)
- 1/2 cup olive oil
- 7 oz. cream of coconut (Coco Lopez, optional, I didn't use it for this version)
- 1/2 cup sugar (unrefined)
- 2 eggs (organic)
- 1/2 cup unsweetened shredded coconut
- 2 tsp. coconut extract
- 14 oz. coconut cream (just the cream and not the juice)
- 1 cup heavy cream (omit and add more coconut cream for a dairy free option)
- 2 Tbsp. organic sugar
- 2 oz. coconut chips (toasted)
