- 4 egg whites
- 1 cup butter (organic grass-fed, softened)
- 2 eggs
- 1 can coconut milk
- 2 tsp. vanilla extract
- 1 tsp. almond extract (or 1 teaspoon coconut extract or a mixture of the two, depending if you want more of a coconut or almond flavoring)
- 2 stevia (teasooon Stevita)
- 1/3 cup honey
- 2 1/2 cups almond flour
- 1 cup coconut flour
- 1/2 cup sunflower seeds (finely ground in a coffee grinder to make a flour)
- 1/2 cup unsweetened shredded coconut (toasted in a pan over medium heat)
- 2 tsp. baking powder
- 1/2 tsp. Himalayan salt
- 2 cups whipped cream (organic)
- 1/2 cup butter (softened)
- 1/3 cup coconut butter
- 4 oz. cream cheese (room temperature)
- 1 tsp. vanilla
- 3 tsp. stevia (Stevita, or two teaspoons stevia + 1 Tablespoon Xylitol)
- 2 cups coconut flakes (unsweetened, to coat the outside of the cake)
