This turned out well. Unsure you really need to use a crockpot, but it's nice to get it all done and have it ready when everyone gets home demanding something to eat. Instead of the paste, curry powder, turmeric and ginger, I just added to taste (a few tablespoons of) a homemade curry paste I had in the freezer. Made it even faster. I'd make this again.
