- 1 1/2 cups coconut milk (homemade, cartoned, or canned -> the type you use will affect how thick your chia pudding turns out but it will still be tasty no matter which one you choose!)
- 1 Tbsp. maple syrup
- 1 tsp. vanilla extract
- 1 sea salt (generous pinch)
- 1/4 cup chia seeds (white or black, the color of the seed doesn’t make a difference)
- 1/2 cup Fresh berries (I used blueberries, blackberries, and strawberries)
- 4 cups water (filtered)
- 1 1/2 cups unsweetened flaked coconut ( + additional for topping, lightly toasted in a pan, optional)
