- 1/2 cup unsweetened shredded coconut (start with 1/3 cup)
- 2 egg whites (lightly beaten)
- 1/2 tsp. vanilla extract
- 8 oz. reduced fat cream cheese (softened to room temperature, fat free will not work for this recipe)
- 1/4 cup pure cane sugar (or granulated sugar)
- 1/3 cup coconut milk (can be light coconut milk)
- 1 extra large egg (or large)
- 1 tsp. vanilla extract
- 2 Tbsp. sweetened shredded coconut (or unsweetened, toasted in a 350 degree oven for a few minutes when ready to top bars, this is optional)
- 2 oz. semisweet chocolate (or bittersweet, melted when ready to top bars.)
