- 1/4 tsp. table salt (see Note)
- 2 tsp. baking powder
- 2 tsp. ground cinnamon (Bill calls for 2 but I preferred 1, so that it didn’t dominate)
- 1 cup granulated sugar
- 5 oz. sweetened flaked coconut (about 1 1/2 cups)
- 6 Tbsp. unsalted butter (melted or melted and browned, if desired)
- vegetable oil cooking spray (for baking pan)

Mine didn’t come out as good as your picture. First of all, I cut the sugar to 3/4 for me still sweet, my husband said it was very good. Mine didn’t get firm. After cooling it, I sliced pieces and it’s started falling apart. 😔

Very good. But little coconut flavor. Making it again today and using coconut milk and adding candies ginger.

Easy and delicious! I’ve been dying to make this recipe for while, and I’m glad I finally got to it. I made it eyeballing the ingredients, probably about a teaspoon of cinnamon, maybe 3/4 c of sugar. I browned the butter and I’d say it’s worth the extra step.
Update: I made this last night using unsweetened coconut and King Arthur gluten free measure for measure flour replacement. It can be made gluten free!

Definitely a fan of this loaf. It's dense, flavorful and freezes very well. Easy to make this is a winner simple bread recipe. Cutting the sugar in half or more suited me due to the sweetness from the coconut flakes. Toasted or warmed in the microwave, it's so good with coffee!
