  • 1 1/2 pounds chicken breasts boneless (and skinless, 2 or 3 depending on size, cut into small cubes)
  • 2 tablespoons curry powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 3 cloves garlic (finely minced)
  • 1 jalapeno pepper (seeded and chopped)
  • 1/4 cup basil (fresh and torn roughly)
  • 14 ounces coconut milk (1 can)
  • 1/2 cup chicken broth low sodium (or no sodium added)

    Delicious dish! I would maybe add mushrooms, peas or broccoli to get some veggies in next time but so satisfying!

    This was fantastic. I added some veggies. Next time I will lower the amount of chicken broth and up the coconut milk for a thicker consistency. Super easy and I’m looking forward to the leftovers!

    It was great . I added a small chopped potatoes.
    lovely curry! Was slightly watery for my tastes, so I did boil it off for longer than advised, but it came out fantastic and very tasty! To add a bit of green, I put in brocolli at the same stage the onions were added.
