- 1/4 cup brown sugar
- 1/4 cup coconut oil (melted)
- 1/2 cup sour cream (or plain yogurt)
- 2 large eggs
- 1 tsp. pure vanilla extract
- 1 cup banana (mashed ripe, about 2 large bananas)
- 1/2 cup unsweetened shredded coconut (+ extra for topping, If you use sweetened coconut you could reduce the sugar further)
