I’m not sure the temperature goal is reasonable. The first batch was a black sticky mass in the bottom of the pot at 218 degrees F. Second batch was ladled up at 215 degrees and even seemed a little toasty in flavor; this was not unpleasant, but also not desirable. I will try again later. I will give a new thermometer a try although mine works for other jams and candies. My pans also have heavy laminated bottoms so that wasn’t a problem. It did take 3 days though to clean it.
