- 3 clementines (medium)
- 3 medium eggs
- 100 grams gluten free plain flour (I used Doves Farm)
- 90 grams ground almonds
- 1/2 tsp. baking powder
- 1 pinch salt
- 100 mL buttermilk (dairy free, mix 100ml almond milk with a tablespoon of lemon juice 10 minutes before using)
- 1 tsp. vanilla extract
- 1/2 tsp. almond extract
- 250 grams icing sugar
- 3 Tbsp. clementine juice
- 3 sprigs thyme

worked great! Made a round pan cake and the middle didn’t cook as well, we had to leave it in for a much longer time. It tasted good and was not to sweet or bitter. Doesn’t need icing if you use sugar instead of caster sugar and almond flour instead of ground almonds. Also I forgot to add the almond extract and vanilla extract. Definitely a citrus cake so it is not as poofy or build like a basic cake. Will use again
update: made again a while ago and family loved it, don’t remember if I made any adjustments but here’s another picture
***update, this recipe is amazing and still tastes good even if every thing goes wrong, ran out of milk and used yogurt and it worked great
