I didn't use celery, i doubled the kale and red cabbage, and i used a sweet onion instead of a purple onion but it turned out great

Prepared in crockpot, combining all ingredients thru ginger and cooked on high for an hour, then added remaining ingredients including kale and cooked for a few more minutes. Ingredients still had some crunch, the way i like...was delicious. Also added some lemon pepper seasoning for additional flavor.

I loved this soup. It was lunch for the week and it only lasted till Wednesday. It was fulfilling and irresistible at the same time.

I have allergies so i couldn't use vegetable stock, Just used water and it was really enjoyable but i know if i had used stock it would of been amazing, Still love this dish regardless though

Yummmmmmy !!! The taste is Divine !!!! I didn't find red cabbage but I used white cabbage and beetroot. You must try it! I don't know why the broccoli was a bit over cooked, I wish I could keep it electric green and crunchy, even if I followed exactly the steps; I'll probably add it in the last 7-10 minutes. Bon appetite !!!

This soup is outstanding. First of all it is delicious. It is a little bit spicy, a little bit sour and very earthy. And I also like how colorful it is.
