Pretty yummy& I love that this recipe is healthy but some things you should know:
1. I didn't use coconut as I'm allergic so I switched to earth balance as oil and honey as my only sweetener
2. I tripled the lemon juice almost. I didn't want the as described 'light' lemon flavor, I go bold or nothing. It turned out quite nice flavor wise with no extra honey.
3. It could have used 1 1/2- 2 times the lemon filling part because the crust is a bit dry and can overpower the filling
4. Cut the second baking time (after the filling is added) because I think mine overcooked at a few minutes less than the baking time and this is not a recipe that handles that well. I'd test the top to make sure it doesn't over bake
