Easy, tasty and beautiful!
I used a can of diced tomatoes instead of salsa and the end result was great.

The peppers' firmness was goldilocks (not too flaccid, not too crunchy, but juuuust right), and the stuffing was hearty and filling. Only complaint is that I like my faux Mexican food spicy and complex, and the cumin/garlic/chili powder combo didn't cut it. Will try next time with some top-shelf spicy Mexican ancho chile powder and cayenne seasoning.
