- 1/2 cup milk (any kind – I used unsweetened almond milk)
- 1 large egg
- 1/2 cup oil (I used coconut oil)
- 1/2 cup honey (3/4 cup if you like them very sweet)
- 2 tsp. pure vanilla extract
- 1 1/2 cups spelt flour (whole)
- 1 tsp. baking soda
- 1 cup blueberries fresh (frozen wild, works too – I used wild because they are smaller)
- lemon curd (Clean Eating, as much as you like)
