I didn't have enough broccoli, red potato, or onion. . So I used grated and chopped zucchini, wrung out, and two steamed carrots, a russet potato, and a leek. The rest of the ingredients were the same. I put the steamed veggies into the food processor to chop. These were delicious!! Easy to form, and baked up beautifully. My 16 month old son loves them. I think they would freeze really well. I'm going to make a bunch to freeze.
