Description
Crispy on the outside, soft and fluffy on the inside, these are everything you want a waffle to be. The secret to the crispiness is a not-so-classic ingredient, cornstarch. Whipped egg whites take care of the tenderness, and buttermilk gives them a bit of tang. Serve the waffles topped with chocolate chips, sliced bananas, and maple syrup, or dream up your own creative toppings. The recipe, which makes 8 waffles (7-inch size), is a Yummly original created by Dude that Cookz.

- 1 1/4 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 large eggs (separated)
- 2 cups buttermilk
- 2 Tbsp. sugar
- 5 Tbsp. salted butter (melted)
- 2 tsp. vanilla extract
- nonstick cooking spray (for waffle grates; or use a little melted butter)
- chocolate chips (optional)
- bananas (sliced, optional)
- maple syrup (optional)

Directions
- In a large bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. Set dry ingredients aside.
- Separate egg whites from yolks. Place egg whites in a medium bowl and whip with a mixer on medium-high speed until moist, stiff peaks form when the beaters are lifted, 1 minute. Set aside.
- Into a medium bowl, add egg yolks, buttermilk, sugar, melted butter, and vanilla. Beat or whisk wet ingredients until smooth.
