Description
With layers of coffee-soaked ladyfingers, rich and creamy mascarpone cheese filling, and a dusting of cocoa powder, classic tiramisu is delicious and decadent, but not difficult. In fact this beloved Italian restaurant favorite is a no-bake dessert, similar to an icebox cake. Unlike some versions, this one contains no raw eggs; you’ll whisk together a simple cooked custard on the stove. Once chilled, tiramisu is firm enough to slice like a cake, exposing the beautiful layers inside. At the grocery store, be sure to buy the crunchy style of ladyfingers known as Savoiardi; the spongy kind would be too soft here. The recipe is a Yummly original created by Annalise Sandberg.
Ingredients
- 3/4 cup boiling water
- 2 tsp. instant espresso powder
- 4 Tbsp. rum (divided, optional; or use 1 tsp. rum extract)
- 4 large egg yolks
- 2/3 cup sugar (divided)
- 1/2 cup whole milk (or 2% milk)
- 1 tsp. vanilla extract
- 1 cup mascarpone cheese (8 oz.)
- 1 cup heavy whipping cream
- 7 oz. ladyfingers (crunchy style known as Savoiardi; package may contain 20-24)
- 1 Tbsp. unsweetened cocoa powder (or up to 2 Tbsp.)
Directions
- In a heatproof bowl that’s wide enough to accommodate the ladyfingers (in Step 8), combine boiling water, instant espresso powder, and 3 Tbsp. rum (if using; if you’re substituting rum extract, wait to use it until Step 5). Set aside.
- In a medium heatproof bowl, whisk together egg yolks and 1/3 cup sugar until blended. Set aside.
- Add milk and remaining 1/3 cup sugar to a small saucepan and set over medium heat. Heat, stirring occasionally, until mixture is steaming and sugar has dissolved, 2-3 minutes.
