- 1/4 cup champagne vinegar
- 1/2 cup olive oil (I use Lia Extra Virgin Olive Oil)
- 1 tsp. mustard (Apple Brandy, or Dijon mustard, or whatever you have on-hand.)
- 1 clove garlic (mashed)
- 1 Tbsp. shallots (fine chopped)
- salt
- freshly ground pepper
- 2 large eggs
- 1/2 lb. fingerling potatoes (I use fingerling purple and fingerling potato)
- 4 oz. green beans
- 5 oz. tuna in oil (drained. My favorite brand is Tonnino)
- 2 cherry tomatoes (medium multi-color, quartered)
- 3 cups greens (micro rainbow mix or you can use any mix)
- 1/3 cup green onions (only the green part)
- 1/3 cup Niçoise olives (. If you can’t find it, use any kind you have available.)
- 1 avocado
