- 3 garlic cloves (finely chopped)
- 1 tsp. cumin seeds
- 1 Tbsp. tomato purée
- 500 grams lean lamb mince
- 200 mL red wine
- 1 cinnamon stick
- 400 grams chopped tomatoes
- 1 pinch caster sugar
- 1 tsp. dried oregano
- 3 aubergines (large, thickly sliced)
- 75 grams butter
- 75 grams plain flour
- 600 mL milk
- 1 egg yolk (large free-range)
- 75 grams Parmesan (grated)
- 1 pinch freshly grated nutmeg

Very nice, do make sure that the meat sauce is not too liquid before assembling as mine turned out a bit soupy. Still good though & I will know for next time.

Tastes great. Needs 45 mins in the I’ve to properly cook the aubergine though
