- 1 lb. lean ground beef (adding more beef will just make it a little less saucy)
- 2 Tbsp. unsalted butter (plus more for greasing pan)
- 8 oz. baby portobello mushrooms (sliced or chopped)
- 1 onions (large, chopped, 1-1/4 cups)
- 3 cloves fresh minced garlic
- 1/2 cup all-purpose flour
- 2 cups beef broth (it can also be bone broth)
- 1 cup whole milk (you can substitute the same amount in cream or reduced fat milk)
- 1 tsp. ground thyme
- 1 Tbsp. worcestershire sauce (I used low sodium)
- 1/2 tsp. sea salt (or kosher)
- 1/4 tsp. freshly ground black pepper (plus more for serving)
- 1/4 cup sour cream (or plain Greek yogurt in the same amount, plus more for serving if desired)
- 12 oz. fresh green beans (or frozen, thawed, cut into 1-2 inch lengths)
- 2 cups shredded cheddar cheese
- 32 oz. tater tots (thawed)
- flat leaf parsley (fresh chopped, for garnishing, optional)

No mushrooms or green beans but it turned out amazing ! I would use less of the onion tho! No need for a whole yellow onion. It makes it very oniony.
