- 2 lb. ham shank
- 2 Tbsp. olive oil

- 1 yellow onion (sweet, peeled & diced)
- 5 carrots (peeled cut into 1/8” slices)
- 2 stalks celery (cut into 1/8” slices, optional)
- 3 cloves garlic (minced)
- 1 tsp. herb (dried Parisien, or dried thyme)
- 1 tsp. dry mustard
- 2 tsp. ground black pepper
- 1 tsp. kosher salt (possibly, but taste first)
- 1/2 tsp. seasoned salt
- 1/2 tsp. smoked paprika
- 1/4 tsp. nutmeg
- 3 bay leaves
- 6 bacon strips
- hot sauce (optional)
- chopped parsley (Garnish:, or cilantro, optional)

Great way to handle short-dated refrigerator items. There were some sun-dried tomatoes lurking in the crisper, looking for a purpose. Chop 'em up and throw 'em in. Can you ever have too much onion in the bean soup?

Delicious. I didn't have bacon, but used bacon fat to sauté my veggies to get that flavour. For lack of an available ham hock I had to use leftover smoked ham and it was still awesome. I'm sure it's even better with a smoked hock.
Only thing close to an issue that I ran into was needing to add an extra four cups of liquid about 2/3 of the way through.
Definitely will be making this again!

Great— just used 1/2 of ham shank
And I used Rancho Gordo cassoulet beans which I boiled hard for 5 minutes with a little onion, carrot and celery Then let them sit til recipe was ready for them

Excellent! Rich broth. Wanted to give some to the neighbor but I might be stingy!! Just kidding
Never used spices and herbs with ham before, but definitely a win.
