- 11 oz. canned pumpkin puree (or roasted sweet potato puree*)
- 3 eggs (150 g, weighed out of shell, at room temperature)
- 10 floz evaporated milk (or heavy whipping cream, or half of each, at room temperature)
- 3 Tbsp. unsalted butter (melted and cooled briefly)
- 3/4 cup light brown sugar (packed)
- 1/4 cup granulated sugar
- 1/2 tsp. kosher salt
- 2 tsp. pumpkin pie spice
- 2 Tbsp. all-purpose gluten-free flour (any of my preferred blends will do, with or without xanthan gum)
