Delicious! I substituted a couple of ounces whole wheat flour to add some fiber. It’s perfect: manageable dough, crunchy crust, beautiful crumb. Will bake these bâtards again.
The only step I found tough to do was to stretch out the formed loaves, so they turned out plump rather than stylized, but I like them this way! I guess if you allow them to relax after shaping, the stretching out should be easier.
