  • 1 pound russet potatoes (peeled and cut into 1-inch cubes)
  • 6 tablespoons unsalted butter
  • 1 tablespoon herbs (minced, I used fresh thyme, rosemary, and oregano)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cream (or whole milk)
