Description
It’s hard to beat a classic oatmeal cookie, and while this may be a simple recipe, these cookies are anything but boring. They have rich buttery flavor, a hint of cinnamon, and lots of chewy oatmeal texture. Enjoy them as is, or add raisins or chocolate chips. The recipe, which makes 32 traditional-size cookies or 18 XL bakery-size cookies, is a Yummly original created by Annalise Sandberg
Ingredients

- 2 1/2 cups old-fashioned rolled oats (not quick-cooking)
- 1 1/4 cups all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 3/4 cup unsalted butter (at room temperature)
- 1 cup packed brown sugar (light or dark brown sugar)
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tsp. vanilla extract
- 1 cup raisins (or semi-sweet chocolate chips; optional)

Directions
- Preheat oven to 350°F with racks in upper and lower thirds of the oven. Line 2 sheet pans with parchment paper. (Note that baking 2 pans at a time and switching them halfway through baking saves time. Cookies bake the most evenly cooked 1 pan at a time in the center of the oven, but the recipe will take longer to make.)
- In a large bowl, combine oats, flour, baking soda, salt, and cinnamon. Set aside.
- In the bowl of an electric mixer, using the paddle attachment, beat butter, brown sugar, and granulated sugar on medium-high speed until light and creamy, 3-4 minutes. Stop to scrape down the bowl as needed so mixture is uniform. Add egg, egg yolk, and vanilla one at a time, mixing after each on medium speed until blended, and scraping down the bowl as needed.

I used quick oats and they were still delicious! Added some chips to a few. The recipe is similar to the chewy molasses cookies that I make all the time.. a big fan fav! These will be too..
