- 1 1/2 cups onion (chopped)
- 1 Tbsp. garlic (about 3 or 4 cloves of garlic, minced)
- 3 cups potatoes (diced)
- 1 1/2 cups baby lima beans (frozen)
- 2 cups frozen corn kernels
- 3 cups chicken stock
- 14.5 oz. diced tomatoes
- 1 1/2 cups barbecue sauce
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. brown sugar (packed, optional)
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. ground cayenne pepper
- 2 cups chicken thighs (cooked, shredded or chopped)
- 2 cups pork shoulder (cooked, shredded, or leftover pulled pork)

good, left out brown sugar, used less bbq sauce and added ketchup. Plenty sweet without brown sugar, left out potatoes. Added barley and cooked sausage to one batch and navy beans to the other.

Definitely a classic. Seasoned to taste (I have a bad habit for eyeballing seasonings) and it turned out great. True to the SC/GA form added a honey mustard based bbq sauce and the family was scraping the bottom of the pot.

All of my friends loved it! The only change I made was the bbq sauce. I added half vinegar based bbq sauce and half honey/mustard bbq sauce to give it a more southern taste.

Been dying to make this for awhile now. I just so happened to have almost everything in the pantry, so it seems it was meant to be.
FRICKING YUM!
Used a can of drained corn rather than frozen, Jack Daniels pulled pork and a precooked shredded chicken package from Target, Sweet Baby Rays BBQ sauce After cooking everything, at the end, I thought maybe it might be too liquidy, but no, it actually worked nicely. I used the full amount of cayenne pepper, and the spice was on point-wouldnt change a thing.
Had a honey cornbread box in the pantry-but no milk, so i made cheddar bay biscuits, the Red Lobster ones. Not a good choice :P stick with cornbread.
Amazing, will make again and again!

This recipe is so delicious and hearty! There's a ton of flavor and it's pretty simple to put together. I did modify the recipe a bit based on what I had on hand and might modify again next time but very little needs to be changed.
1. I used 1 can of sweet corn (about 1.5 cups) instead of the frozen.
2. I added 1.5 cups of frozen sliced okra
3. I used the 1/2tsp Cayenne pepper but will probably use only 1/4 tsp next time as it was a wee bit spicy. It's the perfect amount if you like some heat though, my husband didn't add any Siracha or Chalulah like he would have normally.
4. I used chopped chicken breast and it was probably closer to 3 cups. After adding the extra okra, there didn't seem to be enough meat. I would assume the 2 cups would be fine without the addition.
5. I bought Curly's brand prepackaged pulled pork so lowered the bbq to 1 cup as per recommended. It was on the sweet side which we liked but if you know you don't like things too sweet, I'd take it down to 3/4 cup and adjust from there.
After adding everything up to the diced tomatoes it didn't at all look like there was enough liquid. Refrain from adding extra, there's more than enough! With all the extra stuff we added there was still a good amount of broth, however I'm assuming it would be more soupy without all the extras.
This recipe makes more than enough for a family of 4 for dinner, leftovers and to freeze for a later date. We'll definitely be putting it in our rotation!
