- 1 cup dry quinoa (I used red, you can use any color)
- 2 cups water
- 1 lb. boneless skinless chicken breasts (cooked and cut into bite size pieces)
- 2 tsp. lemon pepper seasoning
- 1 Tbsp. coconut oil
- 1 red apple (cored and sliced into small pieces)
- 1 lime
- 2 oranges (large, use the juice from 1 for the dressing and peel and slice up the other for the salad)
- 1 shallot (minced, about 2 Tbs)
- 2 Tbsp. EVOO
- 2 Tbsp. honey
- 1 dash sea salt (and Pepper)
- 1 avocado (diced)
- 4 oz. green salad (mixed, I used Pepper Greens)
