Great! I cut the sugar to 3/4 c and used 1/4 c dark brown sugar instead of light. I also added golden raisins. This is a pretty versatile recipe, I might try adding pecans next..

I originally made this recipe because I had a couple cans of Sweet Potato leftover from Thanksgiving. The first time was made as a loaf, and I had to do it again with the other can they were so good! I made them as muffins the second time and froze several. Pulled them out a couple weeks later and they were still just as delicious after being popped in the microwave for 10 seconds. Will be back again on this one!
