- 11 oz. silken tofu (organic + non-GMO)
- 1/2 cup vegan butter (melted, Earth Balance)
- 1/2 tsp. apple cider vinegar
- 1 shot brewed espresso (freshly)
- 1 cup coconut sugar
- 1 Tbsp. cinnamon sugar
- 2 tsp. vegan butter (: for greasing muffin tin)

I didn’t have enough oats, so I used half whole wheat and half all purpose flour. I also did half & half with cane and brown sugar. These turned out great! I tend to make muffins smaller (less sugar giving my toddler a whole muffin), so this recipe made 18-20ish for me.

Made a few adjustments for what I had in the cupboard. Light brown sugar instead of coconut sugar and vegetable oil instead of vegan butter
They came out amazing will make again

I substituted dairy-free yogurt since I didn't have any silken tofu on hand. They came out great! Thinking I will try with pumpkin as another person mentioned.
