  • 3/4 cup 2% milk
  • 1/2 cup butter (chopped)
  • 1/4 cup all purpose flour
  • 3 eggs (at room temperature, whisked)
  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • vegetable oil (to deep-fry)

    Directions

    1. Combine milk and butter in a medium saucepan over low heat. Bring to a boil then add flour. Transfer to a food processor. With the motor running, slowly add eggs. Process until mixture is thick and glossy. Transfer to a piping bag fitted with a 2/3 inch plain tip.
    2. Combine sugar and cinnamon in a large bowl. Set aside.
    3. Heat oil in a large heavy-bottomed saucepan over medium heat. Pipe circles of batter, 2-3 at a time, into hot oil. Deep-fry for 2 mins, or until golden. Flip and cook for 1-2 mins more. Transfer to cinnamon sugar. Turn to coat. Transfer to a serving platter. Serve.
