- 1 chile pepper (serrano, diced, may substitute jalapeno)
- 1 1/2 Tbsp. olive oil
- 1 Tbsp. fresh ginger (grated)
- 1 lemon
- 1 Tbsp. water

Directions
- Place the cilantro, onion, coconut, serrano, olive oil, ginger, lemon juice and rind, and water in the blender to form a paste.
- Remove from blender, place into a glass dish, cover, and refrigerate.
