- 15 oz. black beans (drained and rinsed)
- 1 1/2 cups sweet corn (I usually use frozen organic super sweet from Costco for convenience, but roasted corn cut off the cob the best option if you can do it)
- 1/2 pt. grape tomatoes (organic, halved or quartered, depending on size, mine are usually small so I just halve them)
- 2 Tbsp. fresh cilantro (chopped)
- 2 Tbsp. lime juice (fresh squeezed)
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- 2 Tbsp. oil (I usually do 1 Tbsp extra virgin olive oil and 1 Tbsp avocado oil)
- 1 Hass avocado (large, or 2 small avocados, pitted and cubed)

Delicious. Served it at a picnic and people loved it. Leftovers were better the next day.

It was very good but i dont like avocados or cilantro, so i took those out lol
I made this as a side dish for tacos! Husband is very picky and he liked it!

amazing!! light & refreshing - yet filling enough as a summery main meal for 2. i've made it twice already with an oil-free cilantro lime dressing (instead of the olive oil & lime juice). i serve it on a bed of shredded cos lettuce with the avocado on the side, garnished with fresh cilantro & lime wedges. a keeper in my menu rotation :)
