- 1 lb. breakfast sausage (pork, like Bob Evans in a roll preferably with extra sage)
- 1 qt. stock (box of, turkey or chicken, you might use more or less)
- 1 onion (large, diced small)
- 6 ribs (celery with leaves, diced small)
- 1 1/2 sticks unsalted butter
- 1 bunch parsley (chopped)
- 2 garlic cloves (finely minced)
- 1 egg (beaten)
- dried sage
- thyme
- salt
- pepper
- sage leaves (for garnish, optional)
