The bread turned out very good. crispy crust. the crumb almost perfect. Matter of fact I've just prepared the biga so I can bake some more in the morning.

Was delicious, next time I will let it rise for another 2x as it was cold and my dough wasn’t as wet as the recipe explained. Not enough air bubbles in my dough 😢
