- 1 Tbsp. neutral oil (for cooking)
- 3 tsp. cumin seeds
- 1 onion (chopped)
- 3 tsp. fresh ginger (finely chopped)
- 3 cloves garlic (finely chopped)
- 3 tsp. garam masala powder
- 2 tsp. ground cumin
- 4 whole star anise
- 1/2 tsp. cayenne powder (to taste, try ¼ first, maybe taste & add more)
- 1 medium carrot (chopped & cooked)
- 1 medium potato (chopped & cooked)
- 3 tsp. salt (to taste)
- 400 grams chickpeas (tins organic, or 1 chickpea, 1 beans of choice)
- 1 1/2 cups tomato puree (or passata)
- 1/2 cup water (plus extra if needed)
- fresh coriander (optional:, /cilantro to serve)
- 2 peas (for that colourful pop)
