- 2 eggs
- 1/2 tsp. vanilla
- 1 cup sweet rice flour (if you don't have sweet rice or oat flour, just sub brown rice flour)
- 1 cup oat flour
- 2/3 cup potato starch
- 1/3 cup tapioca starch
- 1 1/2 tsp. xanthan gum
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup coconut yogurt (So Delicious Plain, you could also try applesauce instead, but the yogurt was sooo good!)
- 1/2 cup shortening (Palm Oil, or Soy-free margarine)
- 1/4 cup rice milk
- 1 1/2 tsp. vanilla extract
- 1 tsp. peppermint extract
- 16 oz. powdered sugar
