- 2 tsp. cumin seeds
- 1 1/2 tsp. caraway seeds
- 3 Tbsp. virgin olive oil (extra-)
- 1 yellow onion (large, chopped)
- 1 serrano pepper (minced)
- 1/2 tsp. ground paprika
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cayenne (more if you like the heat)
- 1 1/2 cups couscous (I used Israeli for the picture, but any kind will do)
- 4 oz. fish fillets (such as halibut, salmon or cod)
- 1 bunch cilantro leaves (chopped)
- 1 handful fresh mint leaves (chopped)
