- 2 Tbsp. butter
- 1 yellow onion (diced)
- 2 garlic cloves (chopped)
- 1 lb. chorizo (ground, you can also use the chorizo sausage sold in casings - remove from casings when cooking)
- salt
- ground pepper
- 15 oz. diced tomatoes
- 15 oz. beans (rinsed and drained, you can use pinto beans, great northern, kidney... whatever you have on hand)
- 2 tsp. dried parsley
- 2 cups beef stock
- 2 cups water
- 1/2 cup rice (uncooked, feel free to use white, brown, wild, etc...)
- fresh parsley (chopped, or cilantro)
- lime wedges (optional)
