  • 2 onions (medium, peeled and cut into thin wedges)
  • 4 tablespoons olive oil
  • 8 ounces chorizo sausage (sliced)
  • 2/3 cup wine (Rioja)

    Directions

    1. Fry onions in olive oil for 5 minutes until just soft.
    2. Add chorizo sausage and cook for 4-5 minutes until golden. Add Rioja, bring to a boil and boil rapidly for 3-4 minutes until wine has reduced by half. Season to taste and serve hot.
