we really liked this!
i used veggie chorizo and used the enchilada sauce recipe provided, opting for veggie broth instead of water- just watched added salt per recipe instructions.
i had larger flour tortillas, so i used them- i thought they’d be short on filling, but came out well.
next time i will make a little more filling and stick with the larger tortillas. filling as is, but they fill the dish better.
could easily make this vegan- just skip the cheese or use a homemade cheez sauce you like.

very good enchilada sauce and I made a mixture of cheeses was very good to make I use corn tortillas which added extra taste.
