- 1 lb. chorizo sausage (removed from the casing if applicable)
- 8 oz. baby portobello mushrooms (sliced)
- 1 yellow onion (large, diced)
- 1 sweet potato (large, washed and diced, peel if desired)

- 5 cloves garlic (chopped)
- 1 1/2 loaves ciabatta bread (day-old, cut into bite-sized pieces, about 10 -12 cups, lightly toasted)
- 2 cups chicken broth (warmed through, more as needed if the stuffing isn't moist enough)
