I don’t eat pork, so I make this with vegan chorizo, o also wind up using boneless chicken thighs and roughly cutting them up… it’s yummy! the best dish for dinner guests or just a family dinner… everyone I’ve made it for has enjoyed it.

Simple & tasteful! Got thighs without skin or bone but I still fried them the same way and I turned out great
