- 2 cups veal stock
- 5 sprigs fresh thyme
- 3 cloves garlic (smashed)
- 1 Tbsp. olive oil (plus more for serving)
- 2 chorizo sausages (fresh, casings removed)
- 1 cup diced celery (medium, 4 ribs or so)
- 1 cup carrots (medium diced, 2 large)
- 2 cups diced yellow onion (medium, 2 medium)
- ground black pepper
- salt
- 2 Tbsp. tomato paste
- 19 oz. garbanzo beans (drained and rinsed)
- 2 Tbsp. parsley (chopped fresh flat-leafed)
- 5 basil leaves (large, cut into strips, chiffonade)
- grated Parmesan cheese (Freshly, to serve)

I used approximately 1 lb. of bulk chorizo, 3 tbls tomato paste ( 1/2 a can), 1 lb tiny baby potatoes and 3 extra cups of stock. It is still VERY thick soup. Taste is fabulous!!
Because I add more stock, I also added a bit of spanish paprika.
