- 1 lb. chorizo (Mexican style fresh, pork or beef based on your preference)

- 3 cups mozzarella (grated, oaxaca or monterrey jack cheese)
- 1 cup queso fresco (crumbled)

Worked out really well. I used the author’s recipe for the dough as and the result was crispy buttery deliciousness filled with melty flavor packed filling. I would make these again in a heartbeat.
