- 1 Tbsp. Shaoxing wine
- 1 Tbsp. light soy sauce (Chinese)
- 4 Tbsp. potato starch (or corn starch)
- 1 Tbsp. chili flakes (Sichuan, or powder)
- 1 Tbsp. ground Sichuan pepper (freshly, see note)
- 1 tsp. kosher salt
- 1 1/2 cups peanut oil
- 5 garlic cloves (thinly sliced)
- 1 Tbsp. ginger (thinly sliced)
- 2 Tbsp. chili flakes (Sichuan)
- 1 Tbsp. sesame seeds
- 3 cups chilies (whole dried red Sichuan, snip some in half and include seeds for a spicier version)
- 2 tsp. Sichuan peppercorns (or 1 teaspoon red and 1 teaspoon green Sichuan peppercorns)
- 1 tsp. sugar
- 4 scallions (roughly chopped, whites and greens separated)
