- 1 Tbsp. flaxmeal (ground)
- 3 Tbsp. water
- 1 1/4 cups unsweetened soy milk (or any nondairy milk)
- 2 tsp. apple cider vinegar
- 1 1/2 cups white whole wheat flour
- 1/2 cup protein powder (plant-based, I used 1 serving of Vega Sport Vanilla)
- 1/2 cup coconut sugar (or organic sugar)
- 1/3 cup unsweetened cocoa powder (sifted)
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 3 Tbsp. maple syrup
- 1 tsp. vanilla extract
- 1/3 cup dairy free semisweet chocolate chips (I used Trader Joe's; reserve a few to sprinkle on top)
- 1 1/4 cups zucchini (grated, about 1/2 medium)
