- 1 cup zucchini (fresh, shredded)
- 1/2 cup unsweetened almond milk
- 3 Tbsp. raw honey
- 3 Tbsp. pure maple syrup
- 1 Tbsp. coconut oil (melted)
- 1 large egg
- 1 tsp. pure vanilla extract
- 1 1/2 cups dark chocolate chips (high-quality, I like Lily's brand made with stevia Cleanfoodcrush.com/lilys )
- 3/4 cup coconut cream (open can and skim off the top cream for this use, throw the rest in a smoothie later!)
- 1/2 tsp. pure vanilla extract

Great cake!! Made it twice now- the first time was a little dry, so I doubled the coconut oil and increased the milk by 1 tbsp. I also successfully made this vegan (eggless) by using a flax egg, great texture! ( flax egg: 1 tbsp ground golden flax + 3 tbsp non-dairy milk). I also added a 1/3 cup of dark chocolate dairy free chips, which sweetened it just a tad so it was perfect!
