- 2 tsp. vanilla (organic)
- 2 large eggs
- 1 1/2 cups all purpose flour (I use Einkorn flour)
- 3/4 cup cocoa powder (I like this brand)
- 1 tsp. baking powder (aluminum-free)
- 1/2 tsp. sea salt
- 1 1/2 cups shredded zucchini (or about 2 medium-sized)
- 1/2 cup pumpkin seeds (optional for topping - substitute walnuts or pecans if you prefer)
