- 2 cups red wine (I used a whole bottle, 750ml)
- 1/2 cup caster sugar
- 1 vanilla bean (split)
- 150 grams dark chocolate (good-quality, chopped)
- 300 mL cream (thickened)
- 2 eggs (lightly whisked)
- 1/4 cup dark rum (I used whisky as that’s what I had)
- whipped cream (for serving)
- 1 cup plain flour (I used a bit more)
- 1/3 cup almond meal
- 1/3 cup icing sugar (mixture)
- 1/4 cup cocoa powder (plus extra for dusting)
- 150 grams butter (chilled, chopped)
- 2 egg yolks
